Recipe Exchange

In our last ward, I was in the RS Presidency and one of the Enrichment groups I had was a recipe exchange.  We met each month and brought a dish which went along with the theme we set.(ie Main Dishes) You would also bring the recipe to share with everyone.  So, in the middle of the night....  I thought, why couldn't I do that same idea, but on my blog! The drawback...you don't get to taste all the yummy food and sit and chit chat with all your friends.

So here is how it will work.  The first day of each month I will post the theme for the month and a recipe.  You can take a copy of my recipe and then leave one for me and all my readers!  How great is that!  We all get to share in some fun new recipes.

I am a little behind this month, but better late than never.

So...  for September let's start with Appetizers.  Now my recipe that I would like to share comes from a Pampered Chef party that I went to year's ago.  It is so good with these garlic chips that you can get at Costco.  It's great for a party or game night!

Hot Artichoke & Spinach Dip
1 jar (6oz) marinated artichoke hearts, drained and coarsely chopped
1 package (9-11oz) frozen creamed spinach, thawed
1/4 cup mayonnaise
1/4 cup sour cream
1 small garlic clove, pressed
1/2 cup (2oz) grated fresh parmesan cheese
Coarsely chop artichokes with food chopper, place in small batter bowl.  Add spinach, mayonnaise and sour cream. Add garlic and parmesan cheese and mix well.  Spoon into small oval baker.
Bake 20-25 minutes or until heated through.  Serve with Garlic chips or tortilla chips.

All right...so it's not "today" but at least it is getting put up. All of my cookbooks are packed up (awful plug...someone buy my house) in hopes for a quick move. So I only have the ones I saved on my computer. But this one is one of my favorites. It is really great with french bread bites, or veggies.

Spinach Dip

Thaw and squeeze a 10oz pkg. chopped spinach until dry. Stir together spinach, 1 1/2 c. sour cream, 1 c. mayo, 1 pkg knorr vegetable soup mix (sometimes I use the creamy veg mix), 8 oz. can water chestnuts-chopped. Blend well. Cover and refrigerate for 2 hours. Stir before serving.

Serve in a hollowed out head of cabbage. Use pieces of bread to dip in spinach mixture.

It's always a huge hit...I love it! mmmm now I'm craving it..oh dear.

Yum! I'm totally trying this... but, I'm a little stingy with my recipes. I know it's horrible, but it's true!
