Okay so maybe my idea didn't go over that well. Considering my only true and bestest friend in the world submitted a recipe. I love you Tam!
I will let it just roll, and keep goin.
October is my favorite month of the year. The colors are changing, the weather is getting cooler, Halloween is the coolest holiday, and its the start to all the great cooking and baking.
A tradition that we have is warm soups. My Mom is the best at soups, and we would always have a nice big pot of something good on the stove with fresh warm rolls.
This month I decided to share my Taco Soup. I cook up a big crock pot full and bake up some corn bread, and then send the kids out Trick or Treating. It warms the tummy. If you haven't already tried it, I hope you will and enjoy!
Happy October!
Taco Soup
1 lb ground beef (browned)
8oz can tomato sauce
16 oz can stewed tomatoes
16 oz can corn (drained)
30 oz can kidney beans
1 pack of taco seasoning
Warm in a crock pot at least 1hour before serving
Serve with Frito chips, a dab of sour cream, and grated cheddar cheese.

We love Taco Soup and I would have it once a week but the kids don't love it as much as I do ;)
mmmm...I love that recipe. Here is my soup recipe...this was a hard one...I love soup. I have a bunch of really great recipes. It's so hard to decide!! I love my mom's cauliflower soup, hamburger soup, and russian soup. I love my friend's chicken noodle. Oh...which one which one?
Ok..ok..I decided...
Russian Soup...I think I like this one the best for when I have a party. It's not one that people have really had before...and it is sooo good!
Russian Soup
Melt 3 T. butter, add 2 onions and 3 large carrots chopped. Cook for 5 min. Add 6 c. chicken broth, 2 t. dill weed, 2 t. salt, a bay leaf, and 5 c. potatoes (cut up). Cover and simmer for 20 min.
Melt 2 T. butter, sliced mushrooms (1 lb.). cook for 5 min. (seperate skillet) Add to soup.
Mix ½ c. flour with 2 c. half and half. Add to soup slowly so as to not make lumps.
Ready to serve...I make it the night before sometimes, and then just heat it up in the crock pot.
ENJOY!!
Sorry I didn't get my recipe posted. Thought about it at least a dozen times, just didn't act. I'll try harder this month!
Sounds yummy! Have you had the tomato, roasted bell pepper soup from Costco? It's great.
